Custom menus suited for a party of eight or more.

To be able to offer you the best culinary experience possible, the party must agree upon one of the two menus available.

Your order has to be placed at least three days in advance.


Menu 1

Starter

Hand peeled shrimp

topped with bleak roe served on rye bread with pickled red onion, crispy herb salad and dill vinaigrette
Main Course

Halibut

White wine poached halibut served with crayfish risotto and porcino mushrooms flavored with white wine, fresh herbs and cheese from Boxholm, crayfish mousseline baked in Savoy cabbage and mayonnaise with dill and akvavit
Dessert

Crême brulé

flavored with Tahiti vanilla served with mini blueberry cupcake, passion fruit sorbet and vanilla cooked blueberries

Menu 2.

Starter

Fröja salmon

Blackened Fröja salmon served with salmon roe, tempura fried vegetables, sweet strong soy vinaigrette with melon, cucumber and chili, mushrooms, radish and cress (can be made vegetarian with dumplings filled with vegetables)
Main Course

Venison

Herb fried venison served with truffle stewed autumn cabbage with crispy pork loin, sour apple, fried black cabbage, rich game gravy with cherries and confit vegetables
Dessert

Salt brownie

with roasted hazel nuts and hazel nut fudge served with lemon and vanilla cooked pear, pear curd and vanilla ice cream
